Hornkase encapsulates the difference when cheese is made from Demeter milk from cows who retain their horns. Otherwise the recipe is the same as the other mountain cheeses from Hofkaserei Krauss, however here the cheese takes on more robust flavors and aromas from its special milk source. Aged 6 months, this cheese instantly makes your mouth water. Furthermore, this farmer uses the indigenous breed, the Allgauer Braunvieh further celebrating the local terroir and preserving this ancient variety.
